APPLE CASHEW SALAD

 

DRESSING:

2 T honey

2 T apple cider vinegar

1 t Dijon mustard

1/8 t ground cumin

1/8 t freshly ground pepper

3 T canola oil

 

SALAD:

2 cups washed baby spinach

1 medium head Romaine lettuce, washed and chopped

2 small apples, peeled, cored and thinly sliced

8 very thinly sliced rings of red onion, separated and cut in half

½ cup Flanigan Farms Cashews, toasted and coarsely chopped

 

In a small bowl, combine all of the dressing ingredients and mix well.  Place spinach, lettuce, apples, and onion in a large bowl and toss with ¾ of the dressing.  Toss well to coat salad and evenly distribute salad ingredients.  The remainder of the dressing can be added at this point if too dry.  Divide the salad among 6 large chilled plates.  Sprinkle each salad with toasted cashews.  Serve immediately
