Macadamia Nuts This exotic nut made famous by Hawaii, is actually a native of Australia, and also grows in California and Central America. It has one of the hardest shells to crack and therein likes the reason it is so expensive. Once cracked, the kernels must be separated from the shells, but being very heavy, they will not blow off as with many other nuts. Special electronic color sorting equipment is used followed by tedious hand sorting. California production is mainly in Riverside and San Diego Counties where much of the harvest is sold in-shell. |
