SWEET POTATO PECAN PIE Makes 1 9” pie
½ cup brown sugar ¾ t cinnamon 2 eggs, beaten 3 cups cooked yams or sweet potatoes (1 fresh yam = about 1 cup mashed) 3 T orange juice 1 T honey 1 9” pie shell ¾ cup FLANIGAN FARMS PECAN PIECES 1 cup FLANIGAN FARMS PECAN HALVES
Beat together brown sugar, cinnamon and eggs. Mash sweet potatoes in orange juice and blend with pecan pieces into egg mixture. Spread in pie shell. Arrange pecan halves on top and drizzle with honey. Bake at 250°F for 30 minutes. Increase heat to 300°F and bake for an additional 75 minutes or until crust is lightly browned. Chill before slicing. May be frozen to store. |
