Pumpkin Flan with Praline Pepita Topping
Try this wonderful twist on traditional flan. It tastes like a combination between pumpkin pie and caramel flan with a topping that makes it irresistible! AND, its easy to make!
1 teaspoon butter or margarine ¾ cup granulated sugar non-stick cooking spray 1-2.5 oz. package Flanigan Farms Pepitas 1-14 oz can low-fat sweetened condensed milk ½ cup 2% low-fat milk 1 cup pumpkin puree (canned or fresh) 5 medium eggs 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ¼ teaspoon ground cloves 1 tablespoon vanilla extract 1 tablespoon white rum (optional)
Preheat oven to 350 degrees. Toast Pepitas in a single layer in a toaster oven or skillet until they pop. Keep an eye on them because they only take a few minutes! Set aside to cool. Coat 8 custard cups and 1 cookie sheet with non-stick cooking spray and set aside. Melt butter or margarine at medium heat in a heavy saucepan. Add the sugar and turn the heat to high. Stir continuously until the sugar melts and just begins to turn a light tan color. Immediately remove from heat and pour about 2 to 3 teaspoons into each prepared custard cup, swirling cup to coat the bottom. Sugar mixture will harden in cups quickly so you need to work fast. Set custard cups aside. Add toasted Pepitas to saucepan with the remainder of the melted sugar mixture and stir to coat well. Pour Pepitas in a flat layer onto sprayed cookie sheet. Set aside. Place the remaining ingredients into a blender and blend on medium speed until combined. Only a minute or so. Fill each custard cup with mixture and place into a cake pan. Fill the cake pan with about 1-½ inches of hot water. Be careful not to get any of the water into the custard cups. Place the pan containing water and cups into the oven. Bake for 1 hour. Remove from oven and remove custard cups from hot water with tongs. Place them on a rack to cool and then refrigerate for at least 4 hours. Crush hardened Pepita praline mixture with a rolling pin. Invert each custard cup to release flan onto serving dish and top with praline Pepitas before serving. |
