PERSIMMON WALNUT BARS

makes 48 bars

 

1¾ cups flour

½ t salt

1 t cinnamon

1 t baking soda

2½ cups rolled oats

2 cups FLANIGAN FARMS CHOPPED WALNUTS

2 sticks butter or margarine

¾ cup brown sugar, packed

2 eggs

½ cup FLANIGAN FARMS DRIED PERSIMMONS

½ cup white grape juice

1 cup persimmon puree*

 

 

Heat oven to 375°F.  Let dried persimmons stand in persimmon puree.  Mix together dry ingredients set aside.  Cream margarine with brown sugar.  Stir in eggs, persimmons and white grape juice.  Add dry ingredient mixture and stir.  Spread evenly on 11”x13” baking pan lined with baking parchment, leaving ½” space all around.  Bake at 375°F for 45 minutes.  Remove from hot pan to tray and cut into bars. 

 

 

*PERSIMMON PUREE

1 cup dried persimmons

1 cup white grape juice

 

Place dried persimmon slices in white grape juice and let stand for 20 minutes.  Mash reconstituted persimmons to make puree.
