FUYU PERSIMMONS BALLS Makes about 3 dozen
¾ cup FLANIGAN FARMS DRIED PERSIMMONS * ¾ cup flaked coconut ½ cup FLANIGAN FARMS PECAN PIECES 1 T lime juice ½ t grated lemon rind ½ t grated orange rind
Wash and drain dried persimmons. Let stand for a few minutes. Add coconut and pecans. Put through a food grinder. Add lime juice and lemon and orange rinds. Hand knead until well blended. Roll into small balls. If desired, roll balls in additional chopped pecans.
* dried apricots may be substituted. |
