Walnut & Baby Greens Salad

¼ cup olive oil

¼ cup raspberry vinegar

½ teaspoon minced shallot

¼ teaspoon fresh ground black pepper

1 - 6 oz. package baby greens (lettuces)

½ cup Flanigan Farms Walnuts Chopped, toasted

½ cup fresh cooked, or canned (not pickled) beets

4 oz. crumbled goat cheese

 

Whisk the oil, vinegar, shallots and black pepper together in a small bowl and set aside.

Slice the beets into small strips.  Set aside.

Place the baby greens into a large bowl and toss with the above dressing.

Divide equally onto 6 salad plates and then sprinkle each with the goat cheese, walnuts and beets.  Serve immediately.
