New Fashioned Waldorf Salad

Walnuts and apples have long had a love affair due to the combination of sweet and crunchy textures and complimentary flavors.  Here is a version of the ever-popular salad that combines the two without losing the beauty of their colors in a sea of mayonnaise.

 

2  medium apples

1 cup sliced celery

1 4 ounce package Flanigan Farms Chopped Walnuts

1 20 ounce can pineapple chunks, drained (or ½ cups fresh pineapple cut into bite size pieces)

1 cup drained pineapple juice

 

Spread walnuts in single layer to dry roast. ( In microwave about 4 minutes, stirring after two minutes. In oven at 250ºF about 25 minutes.)  This will enhance flavor and add to crispness. Set aside to cool.

 

Cut the apples in half and remove cores and stems.  Cut each half crosswise, then slice leaving peel on so that you have colorful bite size slices.  Using different colored apples will add more color. Toss apples in pineapple juice to coat. This will prevent browning action. Add celery and pineapple. Toss again until well mixed.

 

Chill in refrigerator until ready to serve. Just before serving, add walnuts and mix well.  Serve in a pretty bowl.
