BANANA NUT MUFFINS with Blueberries

Low Fat!

2 large ripe bananas

3 medium egg whites

¾ cup packed brown sugar

¼ cup canola oil

1 T vanilla

½ cup milk or soy milk

1 cup whole wheat flour (or white whole wheat flour)

1 cup un-bleached white flour

¼ t salt

2 T baking powder

1 cup blueberries (fresh, or frozen/thawed)

1/3 cup Flanigan Farms Chopped Walnuts

 

Preheat oven to 350ºF.  In a medium bowl, mash bananas and add next 5 ingredients (egg whites though milk).  Beat on high with electric mixer for 2 minutes.

In a separate bowl, stir together flours, salt and baking powder. Add this (dry) mixture to the wet mixture along with blueberries and walnuts.  Stir mixture just enough to moisten dry ingredients.  Do not over-mix.

Spray 12 muffin tins with nonstick cooking spray and pour muffin mixture evenly into each.  Bake at 350ºF for 25-30 minutes.
