PECAN DATE BARS
1½ cups rolled oats ½ cup unbleached all purpose flour 1-6 oz package FLANIGAN FARMS PECAN PIECES ¼ t salt ½ cup canola oil ¼ cup honey 2 T cold water 1½ lbs. dates ¾ cup brown sugar 1½ t corn starch 1 cup water nonstick cooking spray
Preheat the oven to 350ºF.
Prepare the crust: Process the oats, flour, ¾ cup pecan pieces and salt in a food processor until it becomes a fine meal. Add the canola oil, honey and 1 tablespoon water. Process until the mixture becomes a stiff dough. Add the other tablespoon water only if needed.
Press the dough into an 8X11 inch cake pan that has been sprayed with nonstick cooking spray. Bake for 15-20 minutes, or until lightly browned. Remove from oven and set aside.
Meanwhile, add cornstarch to 1 cup cool water. Stir until dissolved. Add the water, dates, and brown sugar to a medium saucepan and cook at medium heat until mixture becomes thick. Remove from heat and spread hot mixture over the baked crust. Evenly spread the remaining ¾ cup of pecan pieces on top of the date mixture.
Allow to cool for at least 1 hour. Cut into 2” bars and serve. |
