Spinach Pepita Pilaf
¾ cup chicken (or vegetable) broth 2/3 cup instant whole wheat cous-cous 1 T olive oil ½ medium red onion, diced 3 cloves of garlic, crushed ½ lb. chopped spinach (fresh or frozen) 1- 2.5 oz package FLANIGAN FARMS PEPITAS (toasted if desired) ¼ t salt ¼ t fresh ground black pepper ¼ cup Parmesan cheese
Bring the chicken broth to a boil and add the cous-cous. Stir then quickly cover and remove from heat. Set aside.
Sauté onions and garlic in olive oil for about 5 minutes. Add the spinach and continue to cook for about 5 more minutes, until spinach is wilted and tender.
Add the spinach mixture, Pepitas, salt, pepper, and Parmesan cheese to the cous-cous and stir well. Transfer to a serving dish and enjoy! |
