SUNFLOWER CRACKED WHEAT PILAF

4 servings

 

1 cup sliced mushrooms

½ cup cracked wheat bulgar

½ cup chopped onion

2 tablespoons olive oil

1¼ cups water

1 cup diced turkey

½ cup FLANIGAN FARMS SUNFLOWER SEEDS

2 T chopped parsley

1½ lemon juice

¾ t fresh mint

salt and pepper to taste

 

Sauté mushrooms, bulgar and onions in oil until onion is tender and bulgar golden.  Add water; bring to boil.  Simmer covered, about 20 minutes or until liquid is absorbed and bulgar tender.  Add turkey, sunflower seeds, parsley, lemon juice, mint, salt and pepper.  Season with salt and pepper to taste.
